Women in Turkey's southern province of Hatay work in the sun and high humidity to pick tomatoes before turning them into a rich paste. They collect fresh tomatoes from fields, chop them and wait for a day to allow the tomatoes to become watery before boiling them in wood fired ovens to thicken the sauce into a paste. The product is then put in jars for use in the winter season.
